I love making pancakes, waffles and german pancakes from scratch. It just tastes better to me, plus I can fully control what’s going in our bellies. This recipe for pancakes has come to be my favorite. I usually add only half the sugar and have found that by beating the batter rather than stirring it makes the pancakes fluffier.
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg, separated and the white well beaten
- 2 tablespoons melted butter
- milk, just enough to make pourable batter
Combine dry ingredients. Beat egg white till its nice and airy then add to dry ingredients with egg yolk, melted butter, and enough milk for batter to make it the consistency of runny porridge. Beat together well. Cook pancakes on a hot, non-stick griddle.
The recipe is enough for hubby, me and the kid. It doubles easily when family is over.
